TL;DR: Ascites is fluid in the abdomen of a fast-growing broiler, caused by the heart and lungs failing to keep up with the body they supply. It is not an infection — nothing spreads, and separating birds achieves nothing. Anything that reduces available oxygen makes it worse: poor ventilation, ammonia from wet litter, dust, cold stress. What Is Happening
A modern commercial broiler grows extremely fast. Its skeleton, heart and lungs have not been selected as hard as its muscle, and at a certain point the cardiovascular system is being asked to supply a body larger than it comfortably can.
When the demand for oxygen exceeds what the system can deliver, pressure builds through the heart and circulation, and fluid accumulates in the abdominal cavity. Hence the common name, water belly.
Two consequences that shape everything else:

Note the ammonia route. Wet litter produces ammonia, ammonia damages the airway lining, a damaged airway exchanges gas less well, and a bird already at its cardiovascular limit has no margin. That chain runs through chickens in the rainy season and it connects ascites to a problem most keepers think of as purely respiratory.
Your nose is the alarm. If you smell ammonia in the house in the morning, the birds breathed it all night.

This is a fast-growing-broiler problem. Native chickens, dual-purpose breeds and slower-growing meat birds grow at a rate their cardiovascular systems support, and are largely unaffected.
That does not make broilers a mistake — they exist because they convert feed to meat faster than anything else, and that is a real economic advantage.
